Boston, MA....Sean Smith, General Manager, Hilton Boston Financial District, announces the appointment of Julia Brant as Executive Chef of the Hilton Boston Financial District and of its popular dining room, Caliterra. Located at 89 Broad Street, Caliterra is known for its contemporary California cuisine inspired by the classic tradition of Tuscany. Caliterra features a beautiful dining room, a lively bar, a respected wine list featuring California and Italy and a private Wine Room welcoming up to 18 guests for private celebrations.
About Julia Brant
A graduate of Le Cordon Bleu, Brant says her travels and life experiences have shaped her culinary style. From Louie’s Backyard in Key West, Florida learning from Chef Norman Van Aken to Lucias’s Restaurant in MN with Chef Lucia Watson to Wheatleigh Hotel in Lenox, MA, to The Black Cow Tap & Grill in Hamilton, MA, Brant has experienced cultures and cuisines far beyond her native Minnesota roots.
Brant was bitten by the culinary bug at age 18 whle working at the New French Cafe in MN. Her mother handed Brant a copy of The Art of French Cooking, Volume 1 by Julia Child, inscribed by her mother “From my kitchen to your kitchen.” Brant was off and running. Going to college by day and cooking by night, Brant saved her money and went to Cordon Bleu for her culinary education. There she was inspired by the provincial French approach to cooking and its emphasis on local, high quality ingredients nurtured by classic technique.
She brings to Caliterra that same appreciation for local, fresh product. Brant describes a dish showcasing the best of both California & Italy: Sauteed Salmon on a bed of Saffron Lobster Risotto. “It is a rich, lovely dish, simple in presentation, and all about flavor. I will add to it fresh-from-the-farm vegetables and you have a delightful dish where clean, fresh flavor is paramount.”

Fresh lobster, sea scallops, and shrimp served chilled in a martini glass with melon, paypaya, a raspberry and red currant vinaigrette, sugar cane swizzle stick

Grilled Salmon with Pomegranate Sauce

Brant is updating the Breakfast, Lunch, Dinner and Bar menus for the restaurant, as well as the Banquet menus for the hotel’s private dining events. The menus are seasonal, highlighting the farm-to-table philosophy, the bounty of the region, and Brant’s culinary experiences and interests.
